    • Our olives come solely from Kolymvari, Crete.

  • Single Cultivar

    • We only use 100% Koroneiki olives, aka the “Queen of Olives”

  • Early Harvest—Cold extracted

    • Our olives are picked early in harvest. No chemicals or heat are used in the process to extract oil from the olive.

    • Cold extracting the oil using a centrifuge maintains the chemical compounds of the oil and maximizes the cardiovascular health benefits.

  • High in polyphenols- Low acidity

    • Koroneiki olives are rich in precious organoleptic and polyphenol substances which make Éla! EVOO an extremely heart healthy food. It has a very low acidity profile (0.3%) which is correlated to high production standards and results an oil that has high integrity healthy fats.
